Spices should be defined as substances intended to give food a certain taste and aroma. These include spices, herbs, concentrates, and extracts. The most common spices in East Africa are cinnamon, black pepper, cumin, ginger, red chili, cardamom, turmeric, and various combinations of spice mixes usually called Masala.
